Spicy Shrimp Stuffed Mirlitons…

I never knew Chayote squash (Mirlitons) existed until a few days ago but 2/ 50¢ is pretty hard to beat on any produce these days.

The final result was delicious. I’m not a big Emeril fan but this recipe was great… here it is.

You should cut the squash in half before boiling…nowhere in the recipe does it tell you to do that first…it says “…boiled, cut in half and seeded.”  I wish they would put things in the proper order.
